At two in the afternoon, the slump hits. Coffee or something sweet holds it off for twenty minutes, then it's worse than before. Sugar is behind that crash.
gfBar adds no sugar. The sweetness comes only from blueberries and dates, with fibre, fats and protein alongside. It isn't a bar built on sugar.
A few years ago I hit rock bottom. The doctor said ‘incurable’, and the body I had relied on all my life turned against me. For eight months I tried to put it right, and nothing worked. My energy drained away, life shrank to simply getting through the day, and I stopped planning anything beyond tomorrow.
Just before Christmas I flew to Puerto Rico. The laptop stayed at home. The next day, in a supermarket, I bought a two-kilo bag of dried wild Canadian blueberries. No reason. I just did.
I ate them by the handful, almost as a ritual, all week. On day three I walked to the beach. On day five I ordered dinner and finished it. On day seven, people back home told me on the phone that I sounded different. I don't know how much of that was the blueberries, how much the sun, and how much the fact that for the first time in a year I wasn't rushing anywhere. I only know that I kept waiting to slip back to where I'd been – and I didn't. Once home, I ordered more blueberries. And I started reading everything about them I could find.
I could have left it there. Instead, I spent three years working out how to turn those blueberries into something you can take with you. Not a powder, not a supplement. Food. That's how gfBar began: half wild Canadian blueberries, coated in Swiss chocolate, looked after from the bush in Nova Scotia all the way to the box. I'm there in person for every production run. Wild blueberries from Nova Scotia can't be cultivated. They grow on their own in harsh conditions and are harvested from the wild. The blue pigment in them, anthocyanins, is the reason blueberries have been studied for more than twenty years.

Half the filling is dried wild blueberries from Nova Scotia. The rest are ingredients with a reason to be there. The sugars in the table come from the blueberries, dates and chicory syrup. None are added.

The coating is the only part of the bar we don't take straight from the field. We chose Felchlin of Switzerland because it makes chocolate the way we need it: sugar-free 100% cocoa mass from organic cocoa grown in Suhum, Ghana, which it buys directly from the growers. No chocolate flavouring, no compound coating. Cocoa beans and cocoa butter, nothing more. That's why gfBar costs more than bars coated in vegetable fat – and why it tastes different.
COCOA, COCONUT and PROTEIN are all caffeine-free; for children we recommend COCOA or COCONUT (or the JUNIOR case, which has both). COCONUT contains no caffeine or taurine, and there are no nuts in the recipe. It may, however, contain traces of nuts, so we don't recommend it for children with a nut allergy. ORIGINAL is not suitable for children, or for pregnant or breastfeeding women.
ORIGINAL contains Brazil nuts. COCONUT contains milk and soya. All varieties may contain traces of milk, hazelnuts, almonds, peanuts and other tree nuts. None of the varieties contain gluten.

Our process for controlling temperature from the moment the blueberries are harvested to the finished bar – through drying, shipping, storage, production and chocolate coating. Heat takes more out of ingredients than anything else, so we keep it in check along the entire chain, to keep as much of what was in the blueberry in your gfBar as possible. We make gfBar once a month in small batches and dispatch it straight after production. Nothing sits in a warehouse. Orders for the next batch close on 8 November and are dispatched on 16–18 November. In the Czech Republic and Slovakia they usually arrive within two working days; elsewhere in Europe it takes a little longer. We only send parcels Monday to Wednesday, so the chocolate never spends a weekend in a depot. Until orders close you can change or cancel your order free of charge – just email help@gfbar.com and we'll refund you in full. This doesn't affect your statutory rights when buying online. If we have a few cases left over from the previous batch, we'll send them out earlier: Club members first, then in order of purchase, always with the production date.

Wild blueberries have the most to offer at the moment they're harvested. Everything that follows can take something away. Mostly heat. That's why we control temperature along the whole chain, not just for the chocolate: from the harvest in Nova Scotia, through shipping and storage, to every step of production. We make the coating from 100% cocoa mass by Felchlin, the Swiss chocolate maker in Ibach that has supplied couverture to pastry chefs since 1908, made with organic cocoa from Suhum in Ghana. We temper and cool it so it keeps its gloss and doesn't bloom. We call this process Temper Protect®.
